Winter!

Well, in my book it's officially winter! We have our heat on, snow is here, it's below 10F and I am wondering why the calenders make Winter 4 days before Christmas?? Ever wonder why?

Blog of the month!

And this month's blog of the month is....drum roll please! Meditations Of His Love! This site is one of my favorites! You really have to check it out! Here are four things about it.

  1. It is basically an online devotional blog for young woman and girls.
  2. It is very, God honoring! I am sure that even young girls could glean something from their writings!
  3. 5 young woman share their thoughts and write for it. But any young woman can write them and ask to be a part of it!
  4. It is one of the best blogs that I have read!

Pumpkin Bread!

I have a delicious recipe to share! We bought some Libby's Pumpkin, and there was a recipe on the can for a Pumpkin Roll, well since we are a big family pumpkin rolls are a bit to much "to do" so I simply altered the recipe to make it different as well as to fit our family!

(Note: This recipe is very easy, and can easily be reduced to fit your family. Although tripling is not advised!)

Pumpkin Bread

1 1/2 cups of white flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp cloves
1 tsp. Cinnamon
2 cup cane sugar (or white, I used 1 cup cane, and 1 cup brown)
6 eggs
2 cups of canned pumpkin (or your own pumpkin puree)

Preheat Oven to 375 degrees F. Mix eggs and sugar in a bowl. Add pumpkin. Beat. Then in another bowl sift the dry ingredients together. Add to pumpkin mixture. Spread into large pan. Bake for 20-25 minutes. Let cool. if desired top with cream-cheese frosting. Enjoy!

Cream Cheese Frosting:

1 16oz. package of cream cheese
2-3 TBSP of whole or 2% milk.
1 TBSP vanilla
4 1/2 cups of icing sugar

Beat till smooth and creamy. Double the sugar, milk, and vanilla, and mix some more to make for 2 sheet cakes.

Sorry!

I am quite sure that all my readers have left me! I apologize for the lack of posts but first of all here are some reasons why!

  1. We are down with colds! :(
  2. Our laptop crashed and since mom works from home, I have to bide my time and wait for the computer!
  3. We have some things going on with our life!
  4. And finally life itself!

I am going to try to post at least 1 post (maybe 2) per week! But it will depend on how busy we are! Just so you know I DO plan on posting! So just stay with me! LOL :)

Apple Sauce!

Well, if you have read my post about apples, then you know that we got alot! We were at a loss at what to do with them all, but my mom said, we will make apple sauce. It was very fun! We got a late start on it last night about 3, and by the time all of the apples we were going to use for applesauce were peeled, cut, cooked, and pureed, we still had to seal them. That took us till 9:30 PM, it was a long day but a fun one! We put up 22 jars of applesauce! We are going to make apple jelly too so hopefully, I will have some pictures/ posts of that!

Sorry, no pictures, unfortunately................... maybe in a different post! I apologize to you all, but, it takes a while to upload pictures, and our laptop does not download pictures.

Recipe!

Here is a delicious recipe! That our family loves, it is perfect for a cold day!

Sausage Minestrone
Ingredients:
1 lb. ground beef
1 c. chopped onion 2 cloves garlic, minced
8 c. chicken or beef broth
1 can diced tomatoes
2 carrots, coined
2 c. cooked black beans
1 lb. frozen green beans
1 c. uncooked barley or quinoa
4 t. Italian seasonings
1/2 t. paprika
1/4 t. red pepper flakes
1/2 t. dried sage
1/2 t. dried parsley
1 t. fennel seed
salt and pepper
Instructions:
Brown beef, onion, and garlic in a large pot. Add all remaining ingredients except green beans. Bring to a boil, reduce heat and simmer one hour, or until barley is done. Add green beans and heat through.

Apples!

On Sunday afternoon, my family went apple picking after church, at our local Christan orchard. We do what is called gleaning. These people will go to local Christian farms and glean from the fields and orchards what they do not need. But you can take come things home so that is a blessing! It is quite fun! After they are done gleaning they give them to people who need them, and to food pantries.


We got TONS of Delicious apples! Some of them we will eat, but others we will make into crisps, applesauce, pies, and, we will also freeze them. But we might make, apple cider doughnuts, and jelly with! :)

Recipe: Summer Squash Cassarole

I know that some of you have gardens, and I know what it is like to have wayyyyyyy to many squash lying around! So here is a recipe that can help you use up these extras!

6 cups peeled, cubed, and seeded fresh squash
2 eggs, beaten
2 1/2 cups cheddar or mozzarella cheese
1 small fresh onion
1 tablespoon fresh garlic
salt and pepper

Mix all ingredients together, then bake for 40-45 minutes in a 350 degree oven.

Fall

I am excited that fall is here! I just love fall! With it's lovely colors and coolness! I find that it is a refreshing break from the heat of summer. I am looking forward to apple picking, sweaters, pumpkin pies, our Church's annual Reformation Day party, apple cider, and Thanksgiving, but most of all, the times that we can spend together. I love fall.

Jobs #1

Our family works at an organic garden in a town near us, it has been such a learning experience. We are doing garden work in exchange for fresh fruits and produce, it is very fun. We pick, wash, and put produce away in storage. We also, plant, thin vegetables, weed, feed the chickens, goats, ducks, rabbits, and geese, but also help with other odd jobs. It is very fun and the we enjoy it! Sorry no pictures!

We also work at a hen house, but that is a different story ;) Which I will relate in a different post.
