Uggg!

I apologize for the lack of posting these past 3 weeks.....but we have come down with a strange bug that includes, a bad cold, pink-eye, and strep throat. Fun huh? So I thought that I would let you know that I am still alive, and as we are starting to get better, you just might see some more posts!

Blog of the month!

And this month's blog of the month is....drum roll please! Meditations Of His Love! This site is one of my favorites! You really have to check it out! Here are four things about it.

  1. It is basically an online devotional blog for young woman and girls.
  2. It is very, God honoring! I am sure that even young girls could glean something from their writings!
  3. 5 young woman share their thoughts and write for it. But any young woman can write them and ask to be a part of it!
  4. It is one of the best blogs that I have read!

Pumpkin Bread!

I have a delicious recipe to share! We bought some Libby's Pumpkin, and there was a recipe on the can for a Pumpkin Roll, well since we are a big family pumpkin rolls are a bit to much "to do" so I simply altered the recipe to make it different as well as to fit our family!

(Note: This recipe is very easy, and can easily be reduced to fit your family. Although tripling is not advised!)

Pumpkin Bread

1 1/2 cups of white flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp cloves
1 tsp. Cinnamon
2 cup cane sugar (or white, I used 1 cup cane, and 1 cup brown)
6 eggs
2 cups of canned pumpkin (or your own pumpkin puree)

Preheat Oven to 375 degrees F. Mix eggs and sugar in a bowl. Add pumpkin. Beat. Then in another bowl sift the dry ingredients together. Add to pumpkin mixture. Spread into large pan. Bake for 20-25 minutes. Let cool. if desired top with cream-cheese frosting. Enjoy!

Cream Cheese Frosting:

1 16oz. package of cream cheese
2-3 TBSP of whole or 2% milk.
1 TBSP vanilla
4 1/2 cups of icing sugar

Beat till smooth and creamy. Double the sugar, milk, and vanilla, and mix some more to make for 2 sheet cakes.

So now like I promised you, the pictures of the finished applesauce! I have included a picture of the apples as well! We had our entire table covered with apples! Alot huh? :)
