I have a
delicious recipe to share! We bought some Libby's Pumpkin, and there was a recipe on the can for a Pumpkin Roll, well since we are a big family pumpkin rolls are a bit to much "to do" so I simply altered the recipe to make it different as well as to fit our family!
(Note: This recipe is very easy, and can easily be reduced to fit your family. Although tripling is not advised!)Pumpkin Bread
1 1/2 cups of white flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp cloves
1 tsp.
Cinnamon2 cup cane sugar (or white, I used 1 cup cane, and 1 cup brown)
6 eggs
2 cups of canned pumpkin (or your own pumpkin puree)
Preheat Oven to 375 degrees F. Mix eggs and sugar in a bowl. Add pumpkin. Beat. Then in another bowl sift the dry
ingredients together. Add to pumpkin mixture. Spread into large pan. Bake for 20-25 minutes. Let cool. if desired top with cream-cheese frosting. Enjoy!
Cream Cheese Frosting:
1 16oz. package of cream cheese
2-3 TBSP of whole or 2% milk.
1 TBSP vanilla
4 1/2 cups of icing sugar
Beat till smooth and creamy. Double the sugar, milk, and vanilla, and mix some more to make for 2 sheet cakes.
